Do you ever hit 3:00 PM and get the most ridiculous snack cravings? Like clockwork, when it hits 3:00, I am instantly hungry. Given the location of my office, it’s far too easy to wander downstairs and pick up a muffin from Starbucks that will fill me, but not really give me much in the way of energy.
These cookies are the antidote to the 3:00 Snack Attack.
What’s in them:
- 1 1/2 cups old-fashioned rolled oats
- 2/3 cup flour
- 1/3 cup flaxseed meal
- 2 tablespoons light brown sugar
- 1/2 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon salt
- 2 very ripe bananas, mashed
- 1 large egg, lightly beaten
- 4 tablespoons coconut peanut butter
- 2 teaspoons vanilla extract
- 1 cup goji berries
- 1/4 cup dark chocolate chips
The how to:
Preheat the oven to 350 degrees F.
In a large bowl, whisk together the oats, flour, flaxseed, brown sugar, baking powder, baking soda, cinnamon, and salt. In a smaller bowl, mix together the mashed bananas, egg, coconut peanut butter, and vanilla extract. Add the wet ingredients to the dry and mix them until just combined. Stir in the goji berries and the chocolate until evenly dispersed.
Scoop out the dough 1 big spoonful at a time and place on nonstick baking sheets, keeping the cookies 2 inches apart from each other. Bake until cookies are set and slightly golden, for about 12 minutes, then remove the sheet from the oven and let the cookies cool on the baking sheet.
